Viticulture: Organic and biodynamic methods (not certified), goblet trained, Guyot Poussard pruning, no added fertilizer, no hedging, milk sprays for powdery mildew. Vinification: 100% whole cluster, 2 3 week ambient yeast fermentation and carbonic maceration in
